As we release our 2025 holiday blends—Tannenbaum (light-medium) and Ebenezer (dark)—we thought it was the perfect time to explore what makes a roast light, medium, or dark, and how those choices shape the flavors in your cup.

Roasting coffee is a bit like cooking over a campfire: the longer it stays in the heat, the more transformation occurs. But instead of marshmallows or trout, we’re working with green coffee beans—dense, grassy, and packed with potential.
As beans roast, they undergo a series of chemical reactions:
