This washed Castillo from the highlands of Cauca offers a lively, expressive cup with floral aromatics, sweet berry notes, and a gentle cola‑like finish. It’s a bright, clean coffee with a soft sweetness and a refreshing structure — the kind of profile we love from this part of Colombia.
Grown at 1780 MASL by Agroparque Las Villas in the Punta Larga area of Popayán, this lot reflects the region’s reputation for clarity and balance. The combination of high elevation, clay‑mineral soils, and careful washed processing brings out the floral lift and berry depth that make this coffee so enjoyable.
As with all Apex releases, this is a small, limited roast — offered for a short time and roasted to highlight what we find most compelling in the cup.
